Welcome to this week’s #notjustagarnish recipe! There’s nothing more refreshing in the summer than a smoothie, and this fruity red cabbage concoction has a beautiful crisp taste and is packed with antioxidants.

Red Cabbage Microgreens: Nutritional Benefits

Red cabbage is a powerhouse of the microgreen family because of its insane nutritional benefits.


One study found that microgreens have up to 40 times the amount of nutrients like Vitamins C, E, and beta-carotene than their mature counterpart.

Research has found that red cabbage microgreens could reduce risk of cardiovascular disease.

Investigators found that red cabbage microgreens significantly reduced circulating levels of “bad” cholesterol in mice fed a high-fat diet. Red cabbage microgreens were found to contain higher levels of polyphenols and glucosinolates - compounds that can lower cholesterol - than mature cabbage. Based on these results, researchers concluded that red cabbage microgreens may be more beneficial for heart health than mature red cabbage.

Red Cabbage Fruit Smoothie

Prep time: 10 minutes

Yields: 2 servings


Ingredients:

1 cup red cabbage microgreens

2 cups frozen fruit medley - strawberries, peaches, mango, pineapple

1 tbsp honey, or to taste

1/2 can Trader Joe’s lemon elderflower soda - or any other fruity liquid

Directions:

Blend microgreens, frozen fruit, and sparkling soda. Add honey to taste, and blend again.
Pour into a frosty glass and enjoy!
