Welcome to this week’s #notjustagarnish recipe! There’s nothing more refreshing in the summer than a smoothie, and this honey-amaranth smoothie has a beautiful sweet taste and is packed with nutritional benefits.

Amaranth microgreens are crisp, tender, and have a mild earthy flavor with a delicate grassy finish. Their delicate texture can’t hold up to heat, so they’re often served raw.

Honey Amaranth Smoothie
Yields: 2 servings
Prep Time: 10 minutes
Ingredients:
1/2 cup amaranth microgreens
1/2 cup frozen raspberries
1/2 cup frozen peaches
1/4 cup frozen blueberries
2 tbsp honey
1/2 cup flavored yogurt
2 tbsp coconut water
Directions:
In a blender, pulse amaranth and frozen fruits. Add coconut water, blend again. Add honey to taste - we recommend a generous serving!
